Continue a fazer camadas até finalizar com uma camada de bechamel. Salpique com queijo.</span><br />

Quando começar a levantar fervura, retire a espuma q tenha vindo à superfície e deixe ferver em lume brando até ficar reduzido a metade. Coar e reservar.</span></div>

Quando estiver alourado, acrescentar o brandy, o molho de tomate e o caldo, deixando cozer durante uns 10 minutos. Por último, juntar o pão, o peixe em pedaços e a carne da cabeça de tamboril. Rectifique o sal e coza mais 5 minutos.</span></div>
